My Feel Good Journal Day 11 - http://www.BethSawickie.comOne question for today…  Have you ever found a stray flax seed on your kitchen counter and your first thought was…. “Oh shit! I have mice!”…lol.

Here are my 4-G’s for Day 11:

Goin’:  Walked with Soc for 45 minutes today 🙂

Greens:  Green smoothie 🙂 And (mostly) Veggie Stuffed Peppers for dinner.

Smoothie ingredients: kale, 1/2 banana (frozen),  blueberries (frozen), 3 strawberries almond milk, goji berries, chia seeds, flax seed, maca powder and plant-based protein powder.

(almost all) Veggie Stuffed Peppers:

Veggie Stuffed Peppers

Ingredients:  3 Green peppers halved and stuffed with orange pepper (1), red peppers(1/2), zucchini (1/2), mushroom (1/2 c.), onion(1), garlic (2 cloves – minced), diced tomatoes (1 8oz. can) brown rice(1.5 c.), flax seed and 1/2 lb. of  Italian sausage.  Other seasonings – Mrs. Dash no-salt seasoning, little bit of sea salt.

Variations:  Leave out the meat.  Add in whatever veggies you have on hand.

Brown rice was already cooked.  Cooked sausage and placed on paper towel to drain as much grease as possible.  Combined all veggies (except tomatoes) in frying pan with a little bit of olive oil (used Misto Oil Sprayer) and seasonings.  Cooked for a few minutes then added in sausage, rice and can of tomatoes.

Spoon into green peppers that have been cut in half.  I cut mine length-wise.  Top with ground flax seed.  Bake covered @ 350 degrees for 45 minutes.  Remove cover, bake for additional 10-15 minutes.
